Caprese Asparagus

Ingredients


• 1 lb Asparagus, trimmed

• 2 tbsp Olive oil, for drizzling

• Kosher salt and pepper to taste

• 2 cups Shredded mozzarella cheese

• 2 cups rainbow Cherry tomatoes, halved

• Fresh chopped basil, for garnish

• Bottled balsamic glaze, for garnish

Preparation

1. Preheat an oven to 400 degrees.

2. Place the asparagus in an oven-safe dish, drizzle with EVOO.

3. Place the tomatoes on top of the asparagus, drizzle again with oil, and add salt, pepper, and mozzarella.

4. Place the veggies in the oven and cook for 20 minutes or until the cheese has melted and is slightly golden.

5. Remove the baking sheet from the oven, add fresh basil, drizzle the balsamic glaze on top, and serve.

Note:

• Cooking time may vary depending on the thickness of the asparagus.
