Ingredients
Peach Filling
1 (21 oz) can of peaches, cut into bite-size chunks (reserve 1/4 cup juice from the peaches)
1/2 tsp vanilla extract
1/8 tsp cinnamon
1/8 tsp nutmeg
2 Tbsp brown sugar
2 tsp cornstarch
1 tsp fresh minced ginger
Cooking oil spray
Pecan Crumble
1/2 Tbsp turbinado sugar
2 Tbsp flour
1/4 cup light or dark brown sugar
1/4 cup old-fashioned oats
1/4 tsp ground cinnamon
2 Tbsp cold dairy-free butter
1/4 cup chopped spicy pecans
Dairy Free Vanilla Ice Cream for serving

Preparation
1. Preheat the oven to 375°F.
2. Lightly oil a 9-inch square (2-quart) baking dish with cooking oil spray.
3. Combine the peach filling ingredients and pour the mixture evenly into the prepared baking dish.
4. In a 1-quart mixing bowl, combine the crumble ingredients. Press the butter into the mixture using a pastry blender or fork. Stir in chopped pecans. Sprinkle the crumble mixture evenly over the peaches.
5. Bake for 25-30 minutes, until the topping is browned and bubbling.
Serve warm with dairy-free vanilla ice cream."
