About the Recipe

Ingredients

  • 7 oz spicy plant-based ground sausage

  • 1 1/2 tsp chili powder

  • 2 large avocados (halved and pitted)

  • 1 Tbsp chopped red bell pepper

  • 1 Tbsp finely chopped green onion

  • 2 Tbsp water

  • 1/2 cup dairy-free shredded cheddar cheese

  • 1/4 cup prepared red enchilada sauce

  • 12 oz crisp tortilla chips


Toppings

  • Dairy-free sour cream

  • Salsa

  • Cilantro

  • Chopped or sliced black olives

Preparation

  • Preheat oven to broil.

  • In a large frying pan, prepare the plant-based sausage according to the package instructions. Sprinkle with chili powder, green onion, red bell pepper, and 2 Tbsp water. Cook for 2-3 minutes, until the liquid is absorbed.

  • Place the avocado halves on a baking sheet and season with salt and pepper. Scoop 1/4 of the sausage mixture into each avocado half. Drizzle 1 tablespoon of enchilada sauce over the sausage mixture. Top with 2 tablespoons of dairy-free shredded cheese.

  • Broil for 3 minutes, or until the cheese is melted and slightly browned.

  • Top with dairy-free sour cream, salsa, cilantro, and black olives.


    Serve with crisp tortilla chips.
